Refinery Rooftop

Speaking of rosé, Refinery, the Manhattan rooftop with the Empire State Building view, pays homage to the popular wine with their new Rosé All Day menu. Offering the Rooftop Spritz ($16, Wölffer Rosé Cider, gin, thyme, grapefruit and lemon), Sangria (rosé, vodka and sweet hints of peach, orange blossom and apple) available by the glass ($16) or in a pitcher ($75), and a signature Frosé ($17). The fan favorite slushy, blended with rosé and zesty citrus, is part of the rooftop’s I Give A Sip campaign, which donates all proceeds from June to the Alzheimer’s Association.

This summer cocktail combines their house blend rosé with grapefruit, lemon, and citron served with fresh strawberries and lemon wheels in a stemmed glass. Pro Tip: The Sangria is just $10 from 5-7pm every Wednesday-Friday (regularly available for $12) at the newly debuted Trademark Aperitif Cafe in the front coffee shop!

Rooftop Rosé Spritz (Will Benedetto, Cocktail Curator, In Good Company Hospitality)
0.25 oz lemon juice
0.75 oz grapefruit juice
0.5 oz thyme simple syrup*
1.5 oz The Botanist Gin
1 lemon peel
*thyme simple syrup
1 cup sugar
5 large fresh thyme sprigs

In a saucepan, combine sugar, thyme, and 1/2 cup water. Bring to a boil then reduce heat and simmer for 5 minutes. Allow to cool before using. Combine all ingredients in a shaker and shake vigorously. Strain and pour into a glass over ice and top-up with Wolffer Rosé Cider. Garnish with a sprig of fresh thyme.
